Low Carb Poodle Doodles

A delightful peanut butter candy with nuts and coconut, all dipped in chocolate.

These will soon become one of your favorite Christmas candies! (Read on to learn more about the name!)

This recipe is low carb, sugar-free, gluten-free, and a Trim Healthy Mama S Fuel.

This recipe has been a long time coming, and I have hesitated to post them under the name “Poodle Doodles,” but my family was insistent, so here they are.

I had never heard of Poodle Doodles until after my husband and I were married and I went to a day of Christmas cookie baking with his mom and sisters.

Here I learned that these treats were a tradition - and only made at Christmas!

I was a bit horrified when I heard what they called them, but they assured me that they have always called them by that name (at least in their family)!

These delicious little candies were originally called “Chocolate Yummies.”

My father-in-law’s grandmother made them at Christmas time, and she of course called them “Chocolate Yummies.”

But my father-in-law and his brothers titled them “Poodle Doodles,” because, . . . well . . . because of their shape I suppose.

The name stuck - and that is what we still call them all these years later!

He did tell me that he remembers his grandma reprimanding him for calling them by that name.

My husband’s family eventually moved from Michigan to Florida, but his grandma would still package up tins of these Christmas candies and ship it to them.

They are definitely a nostalgic experience.

The original recipe called for dipping them in chocolate or butterscotch.

The butterscotch are my husband’s favorite, and you can easily make them that way with Lily's butterscotch chips!

What you call them is completely up to you - I will not be offended if you choose to call them “Chocolate Yummies” instead of “Poodle Doodles.”

You could even shape them into balls, bars, or bites! But for my family, we will always use this shape (and name, too, I’m afraid).

So, what do you need for these Poodle Doodles?

½ Cup Butter

½ Cup Peanut Butter

1 Cup Shredded Unsweetened Coconut

½ Cup Finely Chopped Nuts (I used walnuts)

½ Cup Gentle Sweet

¼ Cup Golden Flaxmeal

For the Coating:

½ Cup Trim Healthy Mama Chocolate Chips

2 Teaspoons Melted Coconut Oil

Ingredients

For the Coating:

Instructions

  • In a large bowl, melt butter and peanut butter, then mix well.

  • Add coconut, chopped nuts, Gentle Sweet, and flaxmeal, then stir.

  • Place in the freezer for 15 minutes to for mixture to become firm enough to form into shapes.

  • Remove from freezer and form into 2 inch long rectangles/logs. Place back in the freezer for 10 minutes.

  • In a microwave safe bowl, combine chocolate chips and coconut oil, and melt. (I do mine in 30 second increments so I do not scorch the chocolate.)

  • Stir chocolate well, then dip each candy into chocolate and roll to coat.

  • Place on parchment paper or wax paper, and return to freezer until chocolate hardens. (About 15 minutes or so.)

  • Store in refrigerator.

Notes

I highly recommend using the Trim Healthy Mama Chocolate Chips, as they melt so much more nicely! However, if you do not have them, you can use Lily's Chocolate Chips.

Gentle Sweet is a powdered blend of xylitol, erythritol, and stevia. If you want to make it yourself, check out this DIY recipe.

Make them as Bars

The majority of the time now, when I make them, I make them as bars. It is SO much easier and less time-consuming!

Simply spread the mixture in an 8x8 pan, then pour the melted chocolate (or butterscotch) on top!

You're done in about 5 minutes!

Be sure to watch the video to see exactly how I make them as bars.

Can I substitute the flax meal, coconut or nuts?

Yes, absolutely!

Just add the same amount of another ingredient.

Replace the coconut with more nuts.

Replace the flax meal with more coconut, etc.

Can I use almond butter instead of peanut butter?

Yes! They will still be just as delicious!

    Wow! These are so good....I couldn't stop eating little bites after mixing it together! They are in the freezer now and I will be dipping these in the chocolate in a few minutes!       Yes! The original recipe used crunchy peanut butter, and any nut can be subbed for the walnuts.

    These look so yummy! But I need to adjust to leave out the nuts (the peanut butter is ok, but the chopped nuts won’t work for me.) could I just use more coconut? If so, do you have any suggestions on how much to add to replace the nuts? Thanks for your wonderful recipes!!

    These were delicious! I don’t have room in my freezer to lay the rolled candy, so i put it in an 8x8 pan.... just put the chocolate on top. They were so good!! But i guess they’re not really “doodles”.... maybe Poodle Bars..?.. 😊Thank you for sharing this amazing candy!!

      I have not used Super Sweet in these, but I think it would work fine. I would only use half as much as Gentle Sweet.

    Made these and they are good. Had terrible luck trying to melt Lilly’s choc chips which is all I had. So we enjoyed them without the chocolate. These are a great treat for a sweet tooth and I am thankful for the recipe! May try ordering the other choc chips and see how those go

      I'm not sure the caramel sauce would give the same results. You could replace the peanut butter with almond butter, if you have a preference.

    Thank you, thank you, thank you!!! I have been missing Butterfinger candy bars since starting THM. These are so incredibly close and very yummy! I took someone else's suggestion I saw on FB to spread it out on a sheet (I used a silicone sheet) froze it for about 10 minutes, then spread the melted chocolate on. Cut into bars. Thank you for all your terrific recipes!

    For the coating, is it possible that it should have read 2 tablespoons melted Coconut oil instead of teaspoons. We used Lilly chips and 2 t and it was like oreo crumbles, not smooth melted chocolate. ????

      I always use 2 Teaspoons, but you can certainly use more. 🙂 Sometimes if you melt the chocolate too quickly (or for too long) it can turn crumbly.

    Love these! I have made them a couple of times now and they have saved me this Easter. I can happily much away on yummy choccies without any of the bad side effects of Easter chocolate. I roll mine into very smooth, rounded little logs that end up looking like potato gems. I also use THM friendly dark chocolate cause I can't easily get the Lily's choc chips here in Australia and it tastes great! Thanks for a great recipe!

    I have been making these for a couple weeks now and have decided that I could make them into bars, so I make the base and push it down into a lined 8 by 8 pan, and then cover it with the chocolate, cut them once they are hardened and keep them in the fridge...soooo good!!     For an on plan butterscotch flavor use the salted Carmel lily bar- so good! I use it too my peanut butter bars too and in a mock 7 layer cookie fir that butterscotch flavor - thanks for the recipe, they are so good!

      Yes, you can use any sweetener you like. I believe Gentle Sweet may be a bit sweeter than the monk fruit or Swerve, so you may need a little more.

    I have never left a comment on a blog before. These are absolutely delicious! I rolled them into bite size balls. I found the Lilly butterscotch chips. I did 1/2 butterscotch and 1/2 chocolate. We decided we like the butterscotch better, but just by a small margin. My non eating keto husband just walked by and had his third. This are a hit!

    I just wanted to say that these work for Valentine's Day treats as well! My son and I used some heart-shaped cookie cutters that we had and just pressed the mixture into the cookie cutters after having the mixture in the freezer for 15 minutes, as recommended in the recipe. Then we put the hearts back in the freezer for the recommended 10 minutes before dipping them in the chocolate. We all really enjoyed them, even though my son and husband are not 100% sugar-free. Thank you for this yummy recipe!
