Our no-fail, oven cooking technique for this classic cut of beef is one that I have been using for years. (See: The Perfect Way To Make Prime Rib).

So why would I change things up and make Prime Rib in the Instant Pot?

The initial reason was because that I didn’t have 3 hours to spare!

Although cooking prime rib in the oven is absolutely the best way to cook it, there are times when it just isn’t possible.

First, you may not be able to keep your oven occupied for that long of a time period.

And second, you may not have 3 hours to wait for your roast to cook to perfection.

That is when it is time to turn to your Instant Pot!

How To Make Instant Pot Prime Rib

So how do you make Prime Rib that is worthy of serving by using the Instant Pot?

The answer is really quite simple. Keep it simple!

What Meat To Purchase….

First, be sure to purchase a prime grade cut of meat. This is the highest quality cut of beef and it is important to use if you want the best prime rib.

Yes, it is more expensive than the choice grade, but it is well worth the cost.

Second, whenever given the chance, purchase the first cut of a prime rib roast.

This cut of beef is closest to the sirloin and comes from the 10-12th ribs. It is more uniform in texture and produces a higher quality product when cooked.

However, if all you can find is a second cut, it will work out just fine. The meat may contain a little more fat, but it will still be delicious.

How to Cook The Prime Rib

Now that you know what type of meat to purchase, it is time to get cooking!

The first thing that you must do is to take the prime rib roast out of the refrigerator and let it come to room temperature.

You should NOT make this recipe using a roast right out of the oven.

Second, be sure to sear the prime rib prior to cooking it in the Instant Pot. This will help the juices remain inside the meat while it cooks.

Then add in the liquid and use the trivet to cook your roast.

The Cooking Debate

Now comes the debate. There is much discussion on how long you should cook a prime rib in the Instant Pot. And for that matter, what setting it should be on.

If you search the internet, you will see cook times ranging from 5 minutes to 30 minutes. And you will also find cooking instructions that require you to use LOW pressure.

For us, when we tried making Instant Pot Prime Rib, it was still basically raw after 5-7 minutes of cooking on Low Pressure. And that was even with the 35 minutes of Natural Pressure Release following the cooking time.

However, when we cooked the roast on HIGH pressure and we increased the cook time to 13 minutes, the Prime Rib turned out perfect!

  • 4 pounds beef prime rib roast, boneless

  • Fresh Ground Pepper
  • 1 cup beef stock, unsulted
  • 1/3 cup dry red wine

Instructions

  1. Pull the prime rib roast out of the refrigerator and let it come to room temperature.
  2. Season the roast on all sides with kosher salt and coarsely ground black pepper and set aside.
  3. Place the Instant Pot on Saute. Once the display reads HOT, add the olive oil and brown on each side.
  4. Add the beef stock, red wine, and Worcestershire sauce to the liner of the Instant Pot. Place the trivet in the liquid.
  5. Place the roast on the trivet. Lock the lid in place and turn the vent in the "Sealing" position. Pressure cook/Manual on HIGH pressure for 13 minutes.
  6. Once the cook time expires, allow the pot to stay on Keep Warm for 35 minutes.
  7. Open the pot and measure the inner temperature of the meat at the thickest part. It should register approximately 115 F.
  8. Remove the roast to a plate to rest. Strain the liquid into a large measuring cup to remove any prime rib fat or bits and set aside.
  9. Turn the pot on the Saute. Once the pot reads HOT, add another 2 tablespoons of olive oil to the pot. Then place the prime rib roast back and sear it until brown on all sides. Remove and place under foil to allow it to rest.
  10. With the pot still on Saute mode, add in the strained liquid until hot. Remove and place in a serving dish and serve alongside the roast.

FAQs

Do you add liquid when cooking prime rib? ›

Preheat your oven to 450°F.

Place the roast fat side up on a rack in a roasting pan. Do not add water or cover the roast.

How much liquid in Instant Pot for roast? ›

I recommend adding 1/2 cup of liquid (water or low-sodium beef broth) to the Instant Pot for a roast. Typically you need at least 1 cup of liquid in the Instant Pot; the remaining 1/2 cup comes from the juices released by the chuck roast and the tomato sauce.

How many minutes per pound do you cook meat in an Instant Pot? ›

Add 1 1/2 cups of liquid (water, stock, etc.). Cook for 20 minutes (per pound of meat) at high pressure for large chunks and 15 minutes (per pound of meat) for small chunks. Use a quick pressure release method.

Why is my pot roast still tough in the Instant Pot? ›

If it's still tough, you will need to cook it longer. The pressure cooking process breaks down tough meat, making it tender. Put the lid back on, seal the pressure cooker, and cook at high pressure for another 10 to 20 minutes. The provided nutrition facts are estimates.

Should I add liquid to my roast? ›

Some recipes call for liquid, some do not. It mainly comes down to the type of meat you use. Cuts like chuck roast will release more fat and moisture than leaner cuts, so they don't need any water. In addition, the slow cooker itself creates some moisture, which helps keep the meat juicy.

What should I put on my prime rib before cooking? ›

Make your Prime Rib rub: In a small bowl, stir together: 1/2 Tbsp salt, 1/2 Tbsp black pepper, 1 tsp minced rosemary, 1/2 tsp minced thyme leaves, chopped garlic, and 3 Tbsp olive oil. Lightly pat the roast dry with a paper towel then rub all over top and sides with garlic rub.

Do you need liquid to pressure cook beef? ›

Pressure cookers cook with steam. No liquid = no steam. You can't and shouldn't use your pressure cooker unless you've added sufficient liquid. Instructions will let you know the minimum amount and some even tell you how much to use for different items.

Do you cover meat with liquid in a pressure cooker? ›

While you may cover meat almost completely for a conventional braise, use just enough liquid for the cooker to reach pressure – during pressure cooking the meat will release it's own juice and braise in that flavorful liquid, instead.

What is the best meat to cook in a pressure cooker? ›

You can still pressure cook leaner pieces – like eye of round and top sirloin – but these work best if they've been stuffed, shredded or rolled (with other ingredients). Best cuts of beef to use: Chuck steak, Round Roast, Shoulder, Pot roast, Ribs, Brisket, Oxtail.

Can you overcook roast in Instant Pot? ›

In a few words, yes! You can also undercook it, too. Overcooking the meat would result in a very dry tasting pot roast.

What happens if you overcook a roast in an Instant Pot? ›

Unfortunately, once you overcook a piece of meat in the pressure cooker, there's no going back. You'll be left with a pile of dry, crunchy, tasteless fibers and no amount of additional pressure cooking is going to put that moisture back into the meat.

Is it better to slow cook or pressure cook a chuck roast? ›

Some people prefer a roast that has more substance, so if you do, the Instant Pot is the winner. I have tried cooking a roast for up to 120 minutes in the Instant Pot and the texture still didn't match a slow cooker, but every 10 minutes of added pressure cooking will definitely make the meat more tender.

What liquid do you put in the roasting pan for prime rib? ›

Place the roast fat side up in a shallow baking pan; then add some basting liquid to the bottom of the pan. I like to use red wine on the bottom of my pan to give the juices even more of a robust flavor, but water or beef stock will work just as well.

How do you keep prime rib moist? ›

First things first, wrap leftover prime rib tightly in plastic wrap, preferably keeping it intact rather than slicing it. This will help keep as much moisture inside as possible.

How do restaurants make prime rib so tender? ›

How do restaurants make prime rib so tender? The secret to restaurant-style prime rib is cooking the meat super slow at low temperatures. I recommend cooking prime rib at no higher than 200 degrees F. This cooks the meat very slowly, turning the fat into butter and rendering the proteins juicy and soft.
