Adding meat and vegetables to cooking rice is an easy way to create a meal in one pot. It could also be a legume, vegetable, and rice mix. Everything cooks in one pot. The cooking process is simple and needs little attention. You can make several days worth of meals in one shot. The advantage of the meatless variety is that it will last several days longer. The meat variety will on the other hand yield more flavor from adding the meat drippings to the rice cooking process.

Ingredients

  • 1 large onion, yellow, red or white
  • 6 cloves garlic
  • 2 cups dry rice, white or brown
  • any amount of meat or beans of your choice
  • 1 to 2 cups of frozen vegetables of your choice
  • salt, pepper, seasonings you like

    Chop onions, garlic, and bell peppers (optional) if you like them. You can also add frozen peppers when you add your other frozen vegetables.

    Brown the meat in a large, non-stick stockpot. You can choose between turkey, sausage, and beef.

    If you are using beans instead of meat, coat your pan with a little non-stick cooking spray. Sauté them until they are slightly toasted. Add a splash of liquid from the can or soaking liquid if using rehydrated dry beans.

    Add chopped onions, peppers and garlic when your meat is about halfway done.

    If you're using a fatty meat, like ground beef or pork sausage, drain off most of the fat/juices. Leaving only a tablespoon or two in the pot.

    Sauté several minutes.

    Add your plain brown or white dry rice, sautéing it also for a few minutes. Make sure to add the proper amount of water as recommended by the package directions.

    Add your choice of frozen vegetables once you have your water in the pot. Include vegetables such as broccoli, cauliflower, or carrots. Stir everything together. Cover the pot and let it all simmer together for about 20 minutes (longer for brown rice). Consult the package cooking time chart or until the water is absorbed and the rice is tender.

    Stir occasionally to ensure nothing sticks in the corners of the pot and that all that rice absorbs the proper amount of liquid.

    Season to taste with salt, pepper, garlic powder and your favorite seasonings. Top each serving, if you like, with your favorite grated cheese.

    Refrigerate leftovers; microwave for a warm meal.

      • Depending on which meat you elect to use in your rice dish its lifespan will vary. Beef is typically good for 4-5 days after cooking. Poultry only 3-4 days. Legumes however can be safe to eat for a week or more after.
