Equipment

Ingredients

  • 2 ½ cups Frozen Cranberries
  • ½ cup Sugar
  • ½ cup Light Brown Sugar
  • ½ to ¾ cup Orange juice
  • ¼ cup Water

Instructions

  • In a saucepan or nonstick pan, add cranberries, sugar, orange juice, and water and cook over medium-high heat for about 10 minutes or until cranberries start to pop and break apart.

2 ½ cups Frozen Cranberries, ½ cup Sugar, ½ cup Light Brown Sugar, ½ to ¾ cup Orange juice, ¼ cup Water

  • At this stage, reduce the heat to medium and continue to cook until the jam starts to thicken - about an additional 15 to 20 minutes.

  • Remember, this jam will continue to thicken as it cools down. Switch off the flame and allow it to cool down to room temperature. (You can blend if you want it very smooth or pass it through a mesh strainer)

  • This recipe yields about 1 ½ to 2 cups of jam.

  • Once cooled completely, store them in an airtight container or Mason jar in the refrigerator for about 6 to 8 weeks.

Notes

Spiced Christmas Jam

  • To make it festive, you can add orange zest, 1 teaspoon of ground cinnamon and ginger, ¼ teaspoon cloves, and a pinch of pepper.
  • For a different flavor profile, you can add peeled and chopped apples or pears.

Tips

  • Adjust the amount of sugar as desired to balance the tartness with cranberries.
  • For the best flavor, try to use premium-quality cranberries.
  • Only once the jam is cooled completely, store it in the jar.
  • To avoid the jam burning at the bottom, stir during the cooking process.

FAQs

Can you cook cranberry sauce too long? ›

If your cranberry sauce is too thick, it's most likely overcooked. When you cook cranberries (or any berries), they burst, releasing pectin—a natural thickener. The key to a perfect consistency is to allow some but not all of the cranberries to split open—something you'll achieve with less time on the stove.

What to use in place of cranberry jam? ›

Consider a chutney with fresh and dried fruit, a tangy citrus marmalade, and even bacon-onion "jam." The recipes we've gathered are sweet and tart or savory and aromatic, they include the spices, nuts, and deep flavors we associate with autumn and winter, so you won't miss the cranberries one bit.

Why isn't my cranberry sauce thickening? ›

One possibility is that you may not have used enough sugar: Sugar helps the sauce firm up, so be sure to use the full amount called for in a recipe. Another possibility is that the cranberries need to boil for longer, releasing their pectin and ensuring a jelly consistency.

Is cranberry jam the same as cranberry sauce? ›

No, although they contain the same main ingredient, cranberry sauce and cranberry jam are different. Cranberry sauce is usually not as thick and does not contain as much sugar as cranberry jam. Jam usually has a more spreadable consistency and is eaten with bread or used to fill cookies or tarts.

What takes the bitterness out of cranberry sauce? ›

Try A Softer Sweetener

If you don't have maple syrup (pancake syrup WILL NOT do, y'all), try honey or a more neutral sweetener like agave syrup, brown rice syrup, or even simple syrup. All of these syrupy ingredients are a perfect quick fix for bitter cranberry sauce.

Does canned cranberry sauce need to be cooked? ›

It's perfectly fine to serve up cranberry sauce — whole berry or jelled — straight out of the can. But in my experience, heating the canned sauce up takes its flavor to the next level. Plus, it becomes a little more aesthetically pleasing.

How to jazz up jellied cranberry sauce? ›

Spike cranberry sauce with citrus

Adding a teaspoon or two of fresh lemon or orange zest, a tablespoon of chopped candied peel, or even a splash of juice to your canned sauce will brighten flavors and bring in some homemade flavor.

What is the difference between whole berry cranberry sauce and jellied cranberry sauce? ›

The major variation you're likely to come across is "whole berry" versus "jellied." The only difference between them is that the jellied sauce is cooked until the berries have completely broken down. They both slide out of the can as a wobbly red cylinder.

What are the two types of cranberry sauce? ›

Cranberry sauce can be served either as a gooey liquid or as a solid jelly. The jellied version is solid enough to retain the shape of the container in which it's placed whereas the sauce version is much more fluid. The difference between the fluid sauce and the jelly versions comes down to pectin.

Does homemade cranberry sauce thicken when it cools? ›

Reduce heat to a low boil and cook for 10 minutes, until the berries have all burst. Remove from heat. Serve warm, room temperature, or chilled. Cranberry sauce will thicken as it cools.

Why is cranberry sauce upside down? ›

But why? Ocean Spray says this is to get the cranberry sauce out in one intact piece. “The rounded part of the can that looks like the bottom has an air bubble in it,” Ocean Spray's representative explains. The bubble is there so you can “break the seal the sauce makes with the can.”

Do cranberries have lots of pectin? ›

Cranberries are naturally rich in pectin, so they gel easily under the right conditions. The ingredient proportions and cooking time determine whether you end up with a sauce that's too runny, a sauce that's perfectly thickened, or a gel that's firm enough to cut with a knife.

Why isn't cranberry sauce a jam? ›

What is the difference between Cranberry Jam and Cranberry Sauce? They are basically made the same way although cranberry jam is sweeter and may contain extras such as orange juice and spices. Some like to add extra spices such as cloves, allspice and nutmeg.

What state is known for cranberry sauce? ›

Cranberry sauce was first offered to consumers in North America in 1912 in Hanson, Massachusetts. Canned cranberry sauce appeared on the market in 1941, allowing the product to be sold year-round. Cranberry sauce can be used with a variety of meats, including turkey, pork, chicken, and ham.

Why is cranberry sauce not a jam? ›

In the Collins dictionary, it says the following. Jam is a thick sweet food that is made by cooking fruit with a large amount of sugar, and that is usually spread on bread. A sauce is a thick liquid which is served with other food. Obviously, this is a generalisation, and usually it is true.

How to tell when cranberry sauce is done? ›

Pull the sauce off the stove once you hear or see the first few cranberries burst. You want some of them to burst but others to remain whole for the best texture. The sauce can be made up to 1 week in advance; keep refrigerated, and do not add the nuts until Thanksgiving Day, a few hours before serving.

How long to heat up cranberry sauce? ›

Why won't my cranberry sauce gel? Boiling is critical to release pectin, the key gelling ingredient, from the cranberry. You must cook the sauce for at least 10 minutes at a full boil for the pectin to react with the sugar and create the proper gelled texture.

Does homemade cranberry sauce thicken as it cools? ›

Reduce heat to a low boil and cook for 10 minutes, until the berries have all burst. Remove from heat. Serve warm, room temperature, or chilled. Cranberry sauce will thicken as it cools.

How long can cooked cranberry sauce sit out? ›

If you've inadvertently left cranberry sauce on the kitchen counter overnight—whether it's homemade or store-bought—throw it away, no matter how painful. You can safely leave a container of cranberry sauce on the kitchen counter at room temperature for up to 2 hours.
