Combine the onion flakes, beef bouillon granules, and onion powder until blended. If you want a finer soup mix, process it in a blender or food processor. Transfer the soup mix to an airtight container. Store at room temperature for up to 6 months.

This makes the equivalent of 1 envelope of commercial onion soup mix. Use anywhere that onion soup mix is called for. Use it in recipes, mix with sour cream for a dip, use as a seasoning for stews or on roasted meats, etc.

To make onion soup: Combine the dry onion soup mix with 4 cups of water in a saucepan over medium-high heat. Bring to a boil, stirring occasionally. Reduce the heat to a simmer and cook, uncovered, for 10 minutes.

    I've made this as written before and it is good. Was out of beef bullon granules one time and used chicken. Not a bad substitute depending on what you are using it for (beef is richer tasting of course). Theonly thing I don't love is the onion powder. It has a chemical taste to me but maybe it's the brand I have. Will try with a "gourmet" brand and see if that makes a diff.

    For a richer flavor, toast the dry onion. Use a dry skillet for a small amount or toast at 350 oven for larger amounts. Stir frequently. When they start to turn beige, remove from heat and keep stirring. They can become dark quickly.

    Packaged onion soup mix can add too much salt to some recipes. By making your own version at home you can control the sodium. Try using low-sodium beef bouillon granules in place of all or part of the regular kind, depending on what you are making with the mix. This will store in an airtight container for several months. One note, however, this recipe makes about 6 tablespoons. One envelope of Lipton Onion Soup Mix is only about 4 tbsp.
