  • Prime Rib Quesadillas- The only thing better than melted cheese in a crispy tortilla is melted cheese and tender prime rib in a crispy tortilla! Any of these leftover prime rib recipes are delicious, but these prime rib quesadillaswith a little salsa roja have to be my favorite.
  • Leftover Prime Rib Breakfast Burritos- You could serve leftover prime rib breakfast burritos on Cinco de Mayo, but they are even better the next day after partying just a little too hard. Take one bite of this burrito stuffed with prime rib, eggs, avocado, rice, beans, and cheese, and all will feel right with the world!

Another classic meal to serve before the Cinco de Mayo party starts (but that's completely on point for the theme) is rich and delicious enchiladas!

  • Leftover Turkey Enchiladas- I like making these easy, cheesy enchiladas with Turkey leftover from Thanksgiving, but they are equally delicious on Cinco de Mayo! Turkey offers a welcome change from the usual beef and chicken enchiladas, and everyone will enjoy trying something new!
  • Cheese Enchiladas- A classic for a reason, cheese enchiladas are so incredibly satisfying and allow your favorite sauces and toppings to take center stage! Sometimes simple is best, and cheese enchiladas are proof.
  • Shrimp Enchiladas- If seafood is more your vibe, these shrimp enchiladas are everything you could ask for! Tender shrimp, corn, tomatoes, and onions all rolled up in tortillas then topped with a savory red enchilada sauce. Yum!
  • Chicken Enchiladas- You can’t go wrong with chicken enchiladas and they are an easy way to feed a crowd. I enjoy making mine with homemade flour tortillasstuffed with cheese, corn, green chilis, and tender, fall-apart cilantro lime chicken thighs.

  • Green Chile Chicken Stew- Delicious salsa verde with a whole slew of fresh vegetables and tender chicken come together for this flavor-packed stew that is bound to be a new favorite! A dollop of sour cream on top will have you savoring every bite.

If you still haven't found what 'hits the spot' maybe one of these hearty meals can help out! In case you're still undecided, I'd suggest throwing in the Taco Bell Mexican pizza for good measure!

  • Taco Bell Mexican Pizza - Your favorite Taco Bell menu item, but made from the comfort of your own kitchen! This simple tortilla pizza recipe features perfectly seasoned ground beef sandwiched between two crispy tortillas topped with melted cheese and your choice of toppings!

  • Instant Pot Chipotle Barbacoa Beef Cheeks - There’s no need to wait for Cinco de Mayo to whip up some incredible Instant Pot chipotle barbacoa beef cheeks when it is so easy to make! The Instant Pot does all the heavy lifting, and the meat will be so tender people will think you spent hours cooking it!

Best Cinco de Mayo Recipes: Shredded Chicken Tacos (+More Great Ideas!)

Ingredients

  • 3 large chicken breasts (boneless, skinless - approximately 1 ½ pounds)
  • ½ tablespoon olive oil
  • ½ cup yellow onion (or white onion, minced)
  • 1 teaspoon garlic (minced)
  • 1 tablespoon chicken taco seasoning
  • ½ cup salsa roja (see recipe, or your favorite brand)

Instructions

  • Place the chicken in a large pot (cut big pieces into manageable sizes that will cook quickly) and add enough water to fully cover it. Bring to a boil, then reduce the heat and let it simmer until the chicken is fall-apart tender, about 10-15 minutes. Chicken should be 165°F (74°C)before shredding.

  • Remove the chicken using a slotted spoon and allow it to cool, then use two forks and pull the chicken meat into shreds.

  • In a large skillet, heat the olive oil over medium heat and saute the yellow onion until tender, fragrant, and translucent, or about 4-5 minutes. Add the garlic and chicken taco seasoning, mix, and saute for an additional 30 seconds.

  • Mix in the ½ cup salsa roja (or your favorite brand of salsa) until warmed through. Stir in the shredded chicken until evenly coated, then cook on low for 2-3 more minutes.

  • Serve immediately with warmed tortillas or taco shells and your favorite toppings.

Notes

  • Skip step 1 by using my Instant Pot shredded chicken, the perfect easy way to make tacos!
  • You can use frozen chicken for this recipe. It will need to simmer for longer, so be sure to check the internal temperature of the chicken has reached 165°F (74°C)before you shred it.
  • Leftover shredded chicken should be kept in an airtight container. It can be refrigerated for 3 days or frozen for 3 months. Reheat leftovers over medium heat on the stovetop with a splash of chicken stock or extra salsa to keep it from drying out.
