10 Vegetarian Bloggers Share Their Most Popular Recipes (1)

As meaty stews and roasted chickens start to pop up everywhere now that it’s fall, where do you go for inspiration for new vegetarian meals in your kitchen? It’s easy to keep making the things you know best, but that can be boring. I want to help change that.

I asked 10 of my favorite vegetarian or vegan bloggers to each share the most popular recipe on her site. A couple ingredient trends became immediately obvious as the answers rolled in: kale, squash, and lentils need to be on your grocery shopping list this week. These are ten meals to freshly inspire your fall cooking.

1. 101 Cookbooks: Lacinato Kale and Pecorino

Heidi Swanson describes this salad as “easy enough, without being obvious or predictable.” Something you could make for dinner tonight and really enjoy. I love the addition of shredded Brussels sprouts to this dish, and the tasty lemon-tahini dressing.

9. Dolly and Oatmeal: Kabocha Squash, Fennel, and Ginger Soup with Spicy Coconut Cream

This is the kind of soup you make when you want to show off to your in-laws. It’s totally comforting, but also unusual, thanks to the addition of the fennel and the spicy coconut cream.
